Bread with jam, it’s pretty classic, my husband and kids like to eat this combination daily. So why not put them together in a bread recipe? Thus these flower brioche buns with jam were born. Easy to make, fun to shape and perfect for breakfast or a snack.

Soft enriched bread dough

These flower shaped jam buns start with an enriched brioche bread. All you’ll need is a mixing bowl and a few minutes of kneading by hand. This dough is really easy to work with and comes together quickly.

Milk powder

I added the milk powder to boast the milky richness but it is entirely optional. If you don't have it, leave it out altogether or substitute with some condensed milk.

Egg

I only added 1/2 of the egg into the dough because I didn’t want to open a new one for the egg wash before baking.

Shaping tools

To make the flowers, you just need a small shot glass and some oil. If you don’t have a small size glass, use a bottle cap instead. And cutting the dough is easy with just a butter knife if you don’t have dough scraper.

Really fun and easy way to shape some fantastic looking flower buns.

Toppings

Obviously the topping for these flower brioche buns with jam is - jam. Get your favourite(s) and fill about 1 tsp in the centre where we’ve made the dent.

The streusel topping is optional but it does add extra buttery sweetness. And it also helps to weight down the jam because the rising bread during baking can cause the topping to run off from the centre of these buns.

You Will Need

Bread Dough
 130 ml Milk
 260 g All purpose flour or bread flour
 30 g Sugar2 tbsp
 3 g Instant dry yeast1 tsp
 ½ tsp Sea salt
 30 g Milk powder4 tbsp
 1 Large eggDivided
 25 g Unsalted buttersoften
Toppings
 Jam1 tsp per bun
 Streusel 1 tbsp butter + 1 to 2 tbsp sugar + 1 to 2 tbsp flour

Instructions

Make bread dough

Combine milk, sugar, yeast, egg in a bowl and mix. Add the dry ingredients of flour and salt and mix until you can’t anymore with a spatula.

Knead by hand until you have one dough and add the soften or melted butter. Incorporate all of the butter into the dough and then knead the dough on the table surface for 5min until soft and supple. Then leave it to rise covered for 1-2 hours in a warm, draft-free place.

Make the simple streusel topping by mixing up butter, sugar and flour between your fingers until you’ve got crumbs.

Shaping

When the dough has risen well and can hold it’s form when poked, it’s ready to be shaped. Take it out of the bowl, de-gas and then divide into 6 to 8 pieces. Shape each piece into a tight, smooth ball and leave it to rest for 10min covered with cling film.

To make the flower shapes, flatten the ball of dough slightly with your hand. Get a small shot glass and dip the bottom of the glass in some oil, then place in the centre of the ball of dough and press down.

Then cut 6 slits into the dough evenly spaced around the glass. Pinch each of end of the dough that has been separated. Take out the glass and a flower is formed.

Place these flowers onto a baking tray to rise again covered for another 45min to 1hr.

When they’ve puffed up again, the dent in the middle would have also risen. so take that same glass and dent the flower again in the centre. This time do it over the cling film. Get your favourite jam and fill each flower with about 1 tsp of it. Top with the stursel topping and brush with the egg wash we saved eariler.

Bake for 15-20min at 180C or 350F oven.
